Letting your Spirit Soar..

Letting your Spirit Soar.. what does that mean?? how do you let something soar when you can't see it??

Basically, letting your spirit soar is a blind leap of faith.. and every person sees, feels and experiences it differently. No one way is better than another as long as it brings you joy and there's no harm to another..

For one person their spirit may soar with the laughter of their children-..someone's spirit may soar with a trip of a life time that they have been putting off.. others may soar with the simple daily pleasures...

So what have you done lately to let your spirit soar? How does it make you feel to let your spirit soar? When is the last time that you actually let your spirit soar?? What are you waiting for??

Summer Days..

Avocado Strawberry Spinach Salad with Poppyseed Dressing A delicious spinach salad with fresh strawberries, avocados, and a simple poppyseed dressing.

Prep: 10 mins Total: 10 mins Ingredients: Salad Ingredients:
  • 6 cups fresh baby spinach
  • 1 pint strawberries, hulled and sliced
  • 1 avocado, diced (or you can double this to 2 avocados!)
  • 4 ounces crumbled gorgonzola or blue cheese
  • 1/4 cup sliced almonds, toasted
  • half a small red onion, thinly sliced
  • poppyseed dressing (recipe below)
Poppyseed Dressing Ingredients:
  • 1/2 cup avocado oil (or any oil, such as olive oil)
  • 3 Tablespoons apple cider vinegar
  • 2 Tbsp. honey
  • 1 Tbsp. poppy seeds
  • pinch of ground dry mustard (optional)
  • salt and pepper
Directions: To Make The Salad: Toss all ingredients together with your desired amount of dressing until combined. Serve immediately.

To Make The Poppyseed Dressing: Whisk all ingredients together until combined.
